Tea Masala
About this product
A ground blend for masala chai. Warming spices, milled together and packed small so the aroma is still there when you open it.
Cheap chai masala is usually padded out with husk and starch, which is why it takes three spoons to taste anything. A quarter teaspoon of this is enough for two cups.
What is in the jar
- A blend of warming spices, ground
- No sugar, no salt, no artificial flavouring
- No husk or starch bulking
How to use it
- A quarter teaspoon per two cups, added while the tea boils
- Stir into milk for a spiced haldi doodh
- Add to cakes, biscuits and French toast batter
- Sprinkle over coffee and hot chocolate
Add it early in the boil so the spices have time to open up.
Storage
Airtight, cool and dark. Keep the jar closed between cups — this is the one people leave open on the counter.
How long does it keep once opened?
Sealed and kept somewhere cool and dry, several months. Once opened, close the jar firmly straight after every use. Freeze-dried food pulls moisture out of ordinary air quickly, and once it softens the crispness does not come back.
Is this the same as dehydrated or sun-dried?
No. Dehydrated usually means hot-air dried at 60 to 80 degrees, which darkens the food, drives off the aroma and leaves it chewy. Freeze-drying applies no heat at all — the food is frozen, then the ice is drawn off under vacuum. The colour, aroma and structure survive.
Has any sugar or preservative been added?
No. Nothing has been added to this product beyond what is stated on the label. Removing the water is what preserves it, so no chemical preservative is needed. Any sweetness you taste came with the food itself.
Do I need to refrigerate it?
No. Store it at room temperature in a sealed jar, away from direct sun and away from steam. A cupboard is ideal. Do not keep it beside the stove or the sink.
How do I rehydrate it?
Cover with warm water and leave for five to ten minutes, depending on how thick the pieces are. Vegetables can also go straight into anything with enough liquid — soups, dals and curries — and will rehydrate as it cooks.
