SourcingIn season only

Sourcing

We buy in season, from growing regions known for that crop rather than whichever supplier is cheapest that month. Fruit is selected at eating ripeness.

Why it matters Underripe fruit has no flavour to preserve. Overripe fruit collapses in the chamber. The window is narrow.

Washing and inspection

Washing and inspection

Produce is washed, sorted and graded. Anything bruised, underripe or blemished is taken out at this stage.

Why it matters Freeze-drying preserves faults exactly as faithfully as it preserves quality. A bruise goes in, a bruise comes out.

Cutting

Cutting

Fruit is peeled, cored, deseeded and cut to a consistent thickness.

Why it matters Uneven pieces dry unevenly. One damp piece in a jar will soften everything around it within days.

Blast freezingBelow −30°C

Blast freezing

The prepared fruit is frozen hard and fast, well below minus thirty degrees Celsius.

Why it matters Fast freezing forms small ice crystals. Slow freezing forms large ones that rupture cell walls — which is why home-frozen fruit turns to mush when it thaws.

Vacuum sublimationThe expensive part

Vacuum sublimation

The frozen trays go into a vacuum chamber. At very low pressure ice does not melt — it sublimates, turning straight from solid to vapour. The water leaves without ever passing through a liquid stage, so the structure stays standing.

Why it matters This step runs for many hours and uses a great deal of electricity. It is the entire reason freeze-dried food costs what it does, and the reason a strawberry still looks like a strawberry.

Quality check

Quality check

Each batch is checked for residual moisture, colour, aroma and snap before it goes anywhere near a jar.

Why it matters Anything with moisture left in it will not keep. This check is not optional.

PackingAirtight

Packing

Product is packed into food-grade airtight jars and sealed straight away.

Why it matters Freeze-dried food pulls moisture out of ordinary air with surprising speed. The time between chamber and seal is kept as short as possible.

Dispatch

Dispatch

Jars are labelled, boxed with cushioning and dispatched from Surat — within India and worldwide.

Dispatch time Orders placed before 2pm are handed to the courier within one to two business days.

Why It Takes Longer

A hot-air dryer finishes a batch in hours using little energy. A freeze-dryer takes far longer, uses considerably more power, and handles less product per cycle. There is no way to make it cheap.
