Freeze Dried Okra
About this product
The whole problem with bhindi is the slime. Freeze-drying removes the water that causes it, so these slices are dry, crisp and completely free of the stickiness that puts people off.
Most okra crisps on the market are deep fried. These are not fried at any point — no oil is used.
What is in the jar
- Okra, washed and sliced
- No salt, preservatives or colour
- No oil. Not fried.
How to use it
- Eat dry as a crisp, savoury snack — add salt and chilli if you like
- Add straight to sambhar, kadhi and curries while they simmer
- Toss into a hot pan with masala for a very fast bhindi sabzi
- Crush over rice and dal as a crunchy topping
Storage
Airtight and dry. Once okra takes on moisture the crispness goes and the texture turns leathery.
How long does it keep once opened?
Sealed and kept somewhere cool and dry, several months. Once opened, close the jar firmly straight after every use. Freeze-dried food pulls moisture out of ordinary air quickly, and once it softens the crispness does not come back.
Is this the same as dehydrated or sun-dried?
No. Dehydrated usually means hot-air dried at 60 to 80 degrees, which darkens the food, drives off the aroma and leaves it chewy. Freeze-drying applies no heat at all — the food is frozen, then the ice is drawn off under vacuum. The colour, aroma and structure survive.
Has any sugar or preservative been added?
No. Nothing has been added to this product beyond what is stated on the label. Removing the water is what preserves it, so no chemical preservative is needed. Any sweetness you taste came with the food itself.
Do I need to refrigerate it?
No. Store it at room temperature in a sealed jar, away from direct sun and away from steam. A cupboard is ideal. Do not keep it beside the stove or the sink.
How do I rehydrate it?
Cover with warm water and leave for five to ten minutes, depending on how thick the pieces are. Vegetables can also go straight into anything with enough liquid — soups, dals and curries — and will rehydrate as it cooks.
